ZUCCHINI

Breaded Zucchini

INGREDIENTS;
Zucchini
2 or more eggs   
milk
Italian Bread Crumbs.

Cut the zucchini into 1/4 inch slices.  Whisk the egg, milk til frothy.   Dip the slices in the milk mixture and then coat them with the crumbs. Fry til brown on both sides.

Eat and enjoy...However on any leftovers-- Place on a cookie sheet and freeze.  When frozen,  then add into a freezer bag.   Use the frozen slices in Zucchini parmesan. (recipe follows).

ZUCCHINI  PARMESAN

While frying the breaded zucchini, have a package of Italian sausage links cooking in a pot of water.  When fully cooked, slice them on a platter.  (thaw any frozen zucchini)  Spoon  a little spaghetti sauce in the bottom of a covered casserole and spread it across the bottom of the dish.  layer sausage then sauce, then zuchini, then sauce..repeat until all layers used.
Top with grated cheese.. Bake at 350ºF until cheese is melted and sauce is bubbling around the edges

ZUCCHINI BREAD

3 EGGS      1 cup of oil      1 1/2 cups sugar   2 cups grated zucchini   3 teaspoons vanilla
2 cups flour  1/4 cup baking powder   2 teaspoons baking soda    3-4 tsp cinnamon  
  1 cup raisins  1 cup chopped nuts   dash sea salt

Oven 375  greased 2 loaf pans 
Beat eggs.  Stir in oil, sugar, zucchini and vanilla
Combine flour, baking powder, baking soda , cinnamon raisins, nuts and salt.  Stir into zucchini mixture
Divide evenly into the pans  
Bake around 60 min.

You can use a thin vanilla frosting drizzled over the top  or mix pineapple in the vanilla frosting.

STUFFED ZUCCHINI
 1 Zucchini 12-18 inches
1/2-1 lb ground beef, pork,veal or ground poultry
14-16 ounces corn, drained
1 onion, chopped
1 green pepper, diced
1 tomato, chopped
3-4 eggs 
1box stuffing mix
pepper, or crushed red pepper to taste
grated or sliced mozzarella cheese

oven 350º.. grease 9x13 inch baking dish
Wash zucchini, slice each end off and split lengthwise in half.  Scoop out seeds thus making a hollow center.  Place in baking dish.

Combine remaining ingredients except cheese.  Spoon mixture into the hollows.  Add water into the baking dish to a 1 inch depth.
Cover with foil  and bake 1-2 hours or until zucchini is tender.
Remove foil, and top each with the cheese.. Bake for 10 min or until the cheese is melted.
